Meal Plan

Sunday 2/25

  • Dinner – Italian sausage, broccoli, mushrooms, eggplant and tomato sauce, not pasta, OR swap with carnitas for Monday!

Monday 2/26

  • Breakfast – egg toast w/ salsa
  • Lunch – leftover veggies, sausage and tomato sauce
  • Dinner – crockpot carnitas (Skinnytaste) tacos

Tuesday 2/27

  • Breakfast – goat cheese, basil, honey and walnut toast
  • Lunch – leftover carnitas
  • Dinner – mac n cheese (annie’s, from a box… low on budget!) and roasted veggies (TBD based on what’s in fridge)

Wednesday 2/28

  • Breakfast – egg toast w/ salsa
  • Lunch – yogurt, granola and berries
  • Dinner – carnitas and black bean enchiladas with sautĂ©ed zucchini, bell pepper and mushrooms

Thursday 3/1

  • Breakfast – overnight oats
  • Lunch – bread with nut butter, banana and honey
  • Dinner – chickpea tikka masala? (the iron you) [flexible dinner, KK & Z in town]

Friday 3/2 (no meat)

  • Breakfast – egg toast w/ salsa
  • Lunch – leftover chickpea tikka masala
  • Dinner – double date night, dinner out? [KK & Z]
